When taking a dessert like pudding and transforming it into a RAW, VEGAN, and GLUTEN-FREE healthy treat, you might not think it would come out so creamy and delicious. Well, think again! You have to give this easy-to-make, nutritiously packed and tasty delight a try. The texture and flavours are out of this world, I promise you will not be disappointed. Substitute the honey for another unrefined sweetener and it can be vegan as well!
Summer is rapidly coming to an end and drinks on the rooftop at Soho House in Manhattan will soon be a memory. I thought I would share this trendy hotspot with some friends from my town. We had a great time catching up over a few cocktails as we spoke about the highlights of our summer. Making the best of the last few weeks of the dog days is definitely something I am planning to do no matter how hot it gets… as long as it does not interfere with my training😉!
I would say I definitely experimented with dessert recipes this summer more than usual. When my adorable 8 year old son looks up at me with his beautiful blue eyes and says, “Mama can you make some pudding?”, it is hard to say no! So there I am playing around with ingredients and figuring out a way to make this creamy dessert into a dairy and gluten-free snack for my boys.
Growing up one of my favorite desserts was my mother’s homemade rice pudding. Boy did she perfect this sweet treat! I just love the texture and taste. I could eat an entire bowl in one sitting. The perks of having a mom that is a great cook😉. I had to make substitutions to some of her recipes though. Eliminating dairy and gluten is important for keeping my children’s health on track. Now, what did my mom think of my twist on her authentic rice pudding you ask? She absolutely LOVED it and that made me so proud!
Since we are a gluten-free and dairy-free household, I love coming up with healthy and nutritionally packed substitutes that are simple to make. I do not want to complicate my life any more than it is already with 4 boys and 5 cats. Simple snack ideas are the way to go in my book. This recipe is just that… ingredients I already have in my pantry, a vitamix, and a bowl. I did not just use any ingredients though. Below is a list of the health benefits of the wonderful substitutions I added to make this dish a healthy option.
MAPLE SYRUP – unrefined natural sweeteners contain higher levels of beneficial nutrients, antioxidants, and enzymes compared to white table sugar or high fructose corn syrup.
DRIED FRUIT – water is extracted from the fruit making the nutrients in raisins more concentrated. Rich in dietary fiber, carbohydrates with a low glycemic index, minerals, vitamins, and other micronutrients… but most importantly their fat content is low!
CHIA SEEDS – contain fiber and omega-3 fatty acids. Other benefits include calcium, iron, magnesium, manganese, phosphorus and zinc. Chia seeds may also aid in weight loss.
NUTS AND SEEDS – contain good fats called mono- and polyunsaturated fats. These fats help manage inflammation and maintaining the normal structure of every cell in our body. They are also high in protein which helps build muscles.
CINNAMON – can be used to help treat muscle spasms, vomiting, diarrhea, infections, the common cold, and loss of appetite.
So, what did my 4 little critics think of this healthy dessert? They absolutely loved it and gave it a 5 star rating. You have to give this delicious recipe a try😉.
