After a full weekend and there are not too many ingredients in the refrigerator, coming up with a simple meal is a must. How can you go wrong by baking some chicken legs? Light and easy to make, this dish is a great way to feed your family without all the fuss.

What does The Cure have to do with Father’s Day you ask? Nothing! I happened to see them perform this weekend. So when one of my favorite bands was coming to town, I jumped at the opportunity to get my oldest friends together so we could reminisce while we listen to some classic tunes. We really had a blast dancing to songs that brought us back to our younger years. After a busy weekend, I definitely did not want to spend a lot of time in the kitchen. A piece of poultry is one of those meals my kids enjoy. This happens to be the easiest one of them all. Although white meat is leaner, I prefer dark meat because it is juicier and has more flavour. I decided to remove the skin on the chicken in this dish to minimize the fat content. After doing a bit of research, occasionally leaving the skin on a pieces of poultry is not as harmful as we once believed. There is about a 50 calorie difference between chicken with skin than without it. Now this does not mean you should run over to KFC and scarf down a bucket of fried chicken. I made this dish without skin and it ended up tasting great. Ingredients
Servings: whole chicken legs
Instructions
  1. Preheat oven to 350 degrees.
  2. Put the chicken pieces in a baking pan or pyrex with all the ingredients. Add salt and pepper to taste.
  3. Place it into the oven for 50 - 60 minutes. Baste half way through with the juice from the bottom of the pan.
  4. Chicken is ready when the meat is not pink and the liquid is clear when cut at the bone. For accuracy using an instant-read thermometer pierced near the bone will determine the readiness. It should read 165 degrees when the chicken is done.
