After a full weekend and there are not too many ingredients in the refrigerator, coming up with a simple meal is a must. How can you go wrong by baking some chicken legs? Light and easy to make, this dish is a great way to feed your family without all the fuss.
In life, we have choices and we can control certain aspects that shape our destiny. When it comes to family you do not get to choose your parents, but they certainly may help pave the way for your future. Finding a mate and taking that leap into the unknown is definitely a risk. I have to say I am one of those lucky people whose father not only shaped my wonderful life, he also influenced the lives of others around him. A loving, caring and nurturing father with a great sense of humor… what more can I ask for? 30 years later, I made a choice by marrying one of the nicest, most caring and sweetest guy I know. What I didn’t know, until we had kids, is that he would be an absolutely fantastic father. I am truly blessed! Happy Father’s Day to all the great dads out there.
What does The Cure have to do with Father’s Day you ask? Nothing! I happened to see them perform this weekend. So when one of my favorite bands was coming to town, I jumped at the opportunity to get my oldest friends together so we could reminisce while we listen to some classic tunes. We really had a blast dancing to songs that brought us back to our younger years. Wait a minute… do I sound like an old fogey😆 I swear I’m not that old!
After a busy weekend, I definitely did not want to spend a lot of time in the kitchen. A piece of poultry is one of those meals my kids enjoy. This happens to be the easiest one of them all. Paired with a simple vegetable, quinoa, lentils and presto a complete dish in no time.
Although white meat is leaner, I prefer dark meat because it is juicier and has more flavour. I decided to remove the skin on the chicken in this dish to minimize the fat content. After doing a bit of research, occasionally leaving the skin on a pieces of poultry is not as harmful as we once believed. There is about a 50 calorie difference between chicken with skin than without it. Also 55 percent of the fat in the chicken skin is monounsaturated fatty acids which are beneficial in improving blood cholesterol levels and can decrease your chances of heart disease.
Now this does not mean you should run over to KFC and scarf down a bucket of fried chicken. I made this dish without skin and it ended up tasting great. Occasional if you do enjoy a piece of poultry with the skin you don’t have to beat yourself up about it!
