That wasn’t enough for me… I decided to put together this blog. That still wasn’t enough… I started training for a marathon. Now I can add wedding planner to my many hats. With all the craziness going on I do enjoy finding the time to create new healthy recipes. I would have to say my favorite dessert is ice cream. Since we discovered my older son is sensitive to dairy, I have found several options available in the store. I am never satisfied with the ingredients though. All the added refined sugars and unnatural flavouring makes my favorite treat undesirable. For a while now, thoughts of making my very own ice cream has crossed my mind and when I discovered I do not need an ice cream machine, I finally went for it!
The best part about this recipe is that not only does it taste delicious it is not as complicated to make as you may think. Cashews are a wonderful substitute for dairy because once soaked they have a smooth, rich consistency. Using a bit of fat, like the kind found in coconut oil, creates a barrier which prevents ice crystals from formulating.
I decided to use a combination of natural toppings to add a bit of additional sweetness to the dessert. As for the texture, the chewy taste of the dates combined with the crunch of the pecan worked well with the smooth and creamy consistency of the ice cream. I chose to sneak in some chocolate chips to give this dessert an added touch of richness. Unfortunately, I did not make them, but Enjoy Life’s Mini Chips are a great alternative if you are avoiding dairy, soy and gluten. I got a thumbs up from my 4 little critics which made my hectic day complete. I hope you will try this recipe and I would love to hear what you think!

This ice cream is smooth and creamy you will never believe it is dairy free. With just a few natural ingredients and just a couple of simple steps you will be eating a healthy ice cream in no time. The topping is an added bonus to bring out the flavour of this creamy delight.

- 2 cups raw cashews soaked overnight in filtered water
- 1 1/2 cups non-dairy milk
- 3 tsp. coconut oil virgin and unrefined
- 1/2 cup maple syrup
- 1/2 tsp. apple cider vinegar
- 1/2 tsp. sea salt
- 1 tbsp. vanilla extract
- 4 medjool dates
- 1/2 cup pecans
- 1/4 cup vegan chocolate chips Enjoy Life
- Place the cashews with the non-dairy liquid into a vitamix or food processor and blend until it is a smooth consistency.
- Add the remaining ingredients and continue to blend it for about 1-2 minutes until the mixture is smooth.
- Transfer to a freezer-safe bowl, covered and place it in the freezer for at least 5-6 hours or overnight.
- For the topping, place the dates in a food processor and pulse until they are small pieces. Do not over-pulse because the consistency will become too gooey.
- Add pecans and pulse until crumbled. You may need to break a few pieces apart by hand so they are small pieces but not too small.
- Transfer into a container and add the chocolate chips and stir. Place it into the refrigerator until ready to serve.
- Once the ice cream is ready take it out to thaw for 15-20 minutes before scooping it into a serving dish. Add the topping and enjoy!

This is such a great recipe idea! I’m a big fan of dairy free ice creams!! I love chocolate and nuts as a topping to my treats! I see you use apple cider vinegar in the recipe! It holds so many benefits and it’s wonderful that you fit it into your children’s diets.

hello do you think this would work with soya milk instead of almond milk as im not keen on it also havnt made many vegan sweet foods but this ice-cream sounds delish!
