Summer is approaching and it is time to turn on that grill! If you are looking to keep your meals healthy without compromising the taste this is the recipe for you. This sauce works well on chicken or shrimp and it is so easy to make.
Love is in the air! I am very excited to announce that my youngest sister recently got engaged and they make an amazing couple. Yay… that means I get to plan a wedding. Location is yet to be determined but I think a destination wedding is in the cards… Tuscany perhaps. I am so happy to call her fiancé my brother-in-law not only because he is a sweetheart, fun to be around and has an amazing heart, but he is also runner! A casual family gathering took place on Sunday and everyone contributed to a nutritious dish. I was in charge of the meat and keeping it as healthy as possible was my priority.
In today’s society most people like to douse their dish with unhealthy condiments. Yuck😝 Unfortunately, training our children to not appreciate their meal by adding ketchup or mayo will eventually lead to weight problems and health issues as an adult.
Many condiments are loaded with MSG, high fructose corn syrup and partially hydrogenated oils. These artificial enhancers contain excitotoxins which stimulate your taste buds and distort the real flavour of the food. This pathological process causes nerve cells to be damaged or killed because of the excessive stimulation by neurotransmitters such as glutamate. In time the accumulation may be the underlying cause of neurological inflammation and the damage may lead to diseases like Alzheimer’s, Parkinson’s, Huntington’s and ALS.
I urge you if you are going to use condiments please read the ingredients. Not just filled with additives, they are also high in salt which can lead to high blood pressure. After doing all the research on several of these ingredients, I decided to make my own ketchup for this dish. I will be posting it in the next few weeks… all you will need is 4 ingredients. But for now enjoy this healthy BBQ chicken!

Simple to make and tastes great, this dish is a wonderful option for a summer barbecue. The combination of healthy ingredients are bursting with flavour and you are sure to have everyone coming back for seconds.

- 6 chicken pieces
- 3/4 cup ketchup
- 1/4 cup maple syrup
- 3 tbsp. white wine vinegar
- 2 tbsp. onions minced
- 2 tbsp. dijon mustard
- 1/4 tsp. black pepper
- 3 tbsp. scallions chopped
- 1 1/2 tsp. lemon zest
- 1 1/2 tsp. lemon freshly squeezed
- Prepare the grill to medium-hot temperature.
- Season the chicken to taste with salt and pepper. Place it on the grill for 10 minutes on each side.
- To make the BBQ sauce, in a bowl mix all the ingredients until well combined.
- Place about 1/2 the sauce in a bowl to drizzle on the chicken later.
- With the remaining sauce baste the chicken and grill for 5 more minutes. Make sure the chicken is clear at the bone.
- Extras can be used as a dipping sauce or frozen in canning jars for later use.

For the onion, did you use raw minced onion or dried?
I use raw minced onion but if you do not have any dry onions would be ok!
