A few months back my sister, owner of Panepinto Galleries, organized an amazing art exhibit at 70 Columbus, a spectacular high-rise apartment building located in downtown Jersey City with breathtaking views of Manhattan. Regina Mariano, from Regina Mariano Design, along with other local artists transformed four penthouse apartments from blank, pale palettes into fully furnished, impressive dwellings.

This month-long, unique exhibition featured several interesting events including a demonstration of The Inspiralizer by Alissandra Maffucci, creator of the well-known website called Inspiralized.com. She presented this unique and innovative kitchen appliance and made a variety of mouthwatering dishes.
I was hooked when she transforming a simple salad into an edible piece of art. I could not wait to start creating my own masterpieces!
As promised, my latest recipe is another barbecue dish that is sure to satisfy your taste buds. My boys loved my Healthy BBQ Paprika Pulled Chicken so much, creating a seafood barbecue version was a must. I tweaked the recipe a bit to compliment the shrimp and kohlrabi combination and presto a healthy dinner in no time.
What is kohlrabi you ask? Kohlrabi, also called turnip cabbage, is a cultivated cabbage (Brassica oleracea gongylodes group). It is similar to a broccoli stem but its taste and texture is sweet and mild. This wonderful cruciferous vegetable can be eaten raw or cooked and it is loaded with vitamins and minerals. Kohlrabi is a great source of dietary fibers which helps us feel fuller faster… perfect if your are trying to watch your weight. It makes a wonderful grain-free substitute for rice as well!
You will be surprised to discover that this rich, flavourful dish is actually a light, nutritious meal. I promise you will not be disappointed with this recipe.

Rich, sweet and savory, this dish is a perfect dinner option for tonight. The best part about this GLUTEN-FREE, SOY-FREE, PALEO meal is it makes a wonderfully nutritious recipe without compromising the authentic flavour of a barbecue dish.

- 1 tbsp. olive oil
- 1 onion chopped
- 1 celery stalk chopped
- 4 cloves garlic chopped
- 1 tsp. cumin
- 1 tsp. coriander
- 3 tbsp. paprika
- 1/4 cup apple cider vinegar
- 2 tbsp. maple syrup
- 3 tbsp. coconut aminos
- 1 14 oz. can tomato sauce
- 2 lbs. shrimp
- salt and pepper
- 1 large kohlrabi
- In a cast-iron pot or a skillet add olive oil, onion and garlic and sauté until fragrant.
- Then stir in the remaining ingredients, except the shrimp, allowing the sauce to come to a boil and thicken slightly about 10 - 15 minutes.
- Lower the flame and add the shrimp and let simmer for about 5 - 7 more minutes so the flesh of the shrimp is opaque. Remove from heat and add salt and pepper.
- Peel the kohlrabi and spiralize it with BLADE C. Place the spiralized kohlrabi in the food processor in small batches and pulse until it resembles rice.
- Place the rice in a cast-iron pot or skillet with a small amount of oil or water on medium heat for about 3 - 5 minutes and stir frequently. When rice is warmed through remove it from the heat and set aside.
- Plate the rice first and add the shrimp. Enjoy!
