Since my eldest son had food sensitivity issues, I decided to test Kid 2 and eventually Kid 3. I discovered that all 3 have the gene for celiac disease. My household has now become gluten-free. My next challenge was coming up with substitutions for popular dishes and treats. I was already cooking their main meals with whole, organic ingredients so that was not as difficult. The snacks were the hard part! Because of the growing awareness of the problems with gluten and dairy, life has become much easier today than what it was back in 2010 when I began this journey. Now I am a gluten, dairy, egg, soy, peanut-free chef for my family and the meals and snacks are always healthy, nutritious and most of all yummy! What I tell my kids all the time, “You have to eat the good with the bad.” What they do not realize I am transforming the bad to good.
